I absolutely love this vegan turmeric sausage and garlic dish. Its full of flavour, however warning, it has alot of garlic in, so potentially major garlic breath. Garlic is really good for you though, so I'd recommend it! To mix things up abit, adding the turmeric spice (which I love) gives the sausages a nice yellow tinge. This makes a good portion for 2 people.
Here's the ingredients (serves 2)
2 tbsp coconut oil (any oil will do)
4-8 cloves of garlic (chopped small)
1/4 tsp himalayan salt
4 vegan sausages, (sliced)
1 tsp turmeric
Pinch of pepper (this unleashes turmerics benefits)
1 tsp chilli flakes
Good handful of Kale
(Optional) 1-2 cups Edamame beans , or peas
The sauce
1/2 cup of cashews 2 cloves garlic
3 tbsp tomato paste
1 Bell pepper (preferably red)
1/2 cup of water
1 tbsp lemon juice (fresh is better)
1/4 tsp salt
Serve with
2 portions of rice or quinoa
2 tbsp dried thyme
Method
Add all sauce ingredients to blender, puree until smooth and put in fridge.
Preheat large pan medium heat, add 2 tsps of oil. Sautee the chopped garlic.
Start boiling the rice or quinoa
Add sausages and a little more oil, cook until lightly brown (around 5 mins). Then add the turmeric and pepper.
Add the chilli flakes
Add a spash of water, so nothing sticks and start adding the Kale. In batches if needed. Also add the optional edamame beans, cook for about 5 mins.
Serve in bowls. Sprinkle with thyme. Lather the sauce on top. If any sauce left over, use as paste on lunches or freeze.
